Updated Shepherd's Pie

Yes, another one from Kraftfoods.com. I loved shepherd's pie growing up. This has a nice twist on it - the mashed potatoes use sour cream. This dish has great flavor and is a family favorite.

1-1/4 lb. potatoes, cut into chunks
3 large cloves garlic, peeled
3/4 cup Sour Cream
1/2 cup shredded Cheddar Cheese, divided
1 lb. extra lean ground beef
2 Tbsp. flour
4 cups frozen mixed vegetables, thawed
3/4 cup reduced-sodium beef broth
2 Tbsp. ketchup

PLACE potatoes and garlic in large saucepan; add enough water to cover. Bring to boil. Reduce heat to low; simmer 20 min. or until potatoes are tender. Drain; return to saucepan. Add sour cream; mash potatoes until smooth. Stir in 1/4 cup of the cheese.

PREHEAT oven to 375°F. Brown meat in large nonstick skillet. Stir in flour; cook 1 min. Add vegetables, broth and ketchup; cook 5 min. Spoon into 8-inch square baking dish; cover with potatoes.

BAKE 18 min.; sprinkle with remaining 1/4 cup cheese. Bake an additional 2 min. or until cheese is melted.

Perfect BBQ Grilled Chicken

Another from Kraftfoods.com. I know it sounds weird to use cesar salad dressing in a bbq recipe, however it's delicious! The dressing keeps it moist - all you taste is the bbq sauce. This is a very easy and quick recipe that everyone loves.

1/3 cup classic Caesar Dressing
4 small boneless skinless chicken breast halves (1 lb.)
1/4 cup Barbecue Sauce

POUR dressing over chicken in resealable plastic bag. Seal bag; turn to evenly coat chicken with dressing. Refrigerate 30 min. to marinate. Remove chicken from marinade; discard bag and marinade.

PREHEAT grill to medium heat. Place chicken on grill; cover with lid.

GRILL 6 to 8 min. on each side or until cooked through (165°F), turning and brushing occasionally with barbecue sauce for the last few minutes.

Marble Squares

Another family favorite from kraftfoods.com. This is a big hit if you like brownies with a twist. They come out very moist and are delicious!
1/2 cup (1 stick) butter
3/4 cup water
1 pkg. (8 squares) Semi-Sweet Baking Chocolate or 8oz semi-sweet chocolate chips, divided
2 cups flour
2-1/3 cups sugar, divided
1 tsp. baking soda
1/2 tsp. salt
3 eggs, divided
1/2 cup Sour Cream
1 pkg. (8 oz.) Cream Cheese, softened

PREHEAT oven to 375°F. Microwave butter, water and 2 of the chocolate squares in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted. Chop remaining 6 chocolate squares; set aside. Stir in combined flour, 2 cups of the sugar, the baking soda and salt. Add 2 of the eggs and the sour cream; mix well. Pour into greased and floured 15x10x1-inch baking pan.

BEAT cream cheese and remaining 1/3 cup sugar in small bowl with electric mixer on medium speed until well blended. Add the remaining egg; mix well. Spoon over chocolate batter; cut through batters with knife several times for marble effect. Sprinkle with the chopped chocolate.

BAKE 25 to 30 min. or until toothpick inserted in center comes out clean. Cool. Cut into 36 squares.

All-in-One Pot Saucy Pasta

This all time family favorite came from Kraftfoods.com. We've been making it regularly for over two years. It's easy for ward dinners, to take to someone's home, and freezes well.

1 lb. extra lean ground beef
1 medium onion, chopped
3 Cups rotini pasta, uncooked
2 Cups water
1 jar (26 oz.) spaghetti sauce (about 3 cups)
1 Cup sliced mushrooms
1 Cup chopped red peppers
1 Cup Shredded Mozzarella Cheese

BROWN meat large deep skillet; drain. Add onions; cook until tender.

ADD pasta, water and spaghetti sauce. Bring to boil; cover Reduce heat to low; simmer 15 min., stirring occasionally. Add mushrooms and red peppers; cook 5 min.

SPRINKLE with cheese.

Norwegian Meatcakes with Sauce

We had the privilege of having a missionary celebrate his birthday while in our area. He's from Norway so we contacted his mother. She said this is one of his favorite foods. If you enjoy meat and potatoes, you'll love this hearty meal!

1 lb ground beef
1 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg
1/4 tsp ground ginger
2 Tbsp potato flour/starch
7 fl. oz milk
1 egg

Sauce:
2 Cups water
6 Tbsp plain flour
7 fl. oz milk or water
1 beef bouillon cube
1 tsp salt
1/2 tsp pepper

Place ground beef into a bowl, add salt, and work in. It should become sticky. Add the potato starch and spices. Stir well.

Add milk 2 tablespoons at a time. (Stir well before adding more milk!)

Add the egg. With a tablespoon dipped in cold water, form small "cakes"/"cookies" and fry them in a frying pan with butter.

Remove and place on a plate when cooked.

Sauce:
After you have fried the meatcakes, add the 2 cups of water to the pan and let it boil. After a minute, pour it into a different sauce pan.

Add the bouillon cube and bring to a boil. Mix the milk or water and flour (no lumps).

Add the milk/flour mix to the boiling water while stirring. Add meatcakes to the sauce and let it simmer for 10-15 minutes.

Salt and pepper to taste.

Serve over cubed, boiled potatoes.
